The variety of colors in olives are an outcome of timeline during the harvest. Green Olives are first to be picked around October. Harvest festivities continue as the pink, purple, brown and black olives customarily follow in November and December. 

Our “Whole Single Variety Olives” come with the pits and offer a distinctive gastronomic angle to enjoy. Whole olives are typically firmer with the pits still in-tact. When marinated in oil with herbs and spices our whole olives always crown any table where they are shared.
